so I'll be spending a short amount of time in Louisiana next month and I wanna sample the local cuisine... any suggestions?

Eat good food. That's another thing you can't get at Applebee's.

Always leave a member of the party with a shotgun to guard the truck. Carry raw meat with which to ward off the roving gangs of pit bulls. Make sure you have a large drink holder to carry the giant cups from the drive through daquiri shops - it is legal to drink and drive, so, enjoy!
Edit: Oh, sorry - it's not exactly legal - there is the possibility of a maximim $50.00 fine. But you can still get a giant styrofoam cup full of daquiri from drive through windows.
